Potato and Leek Soup 

This is a little taste of home for me! This Leek and Potato Soup with Soda Bread is a recipe that my mum used to make and passed on to me.

 

Soda Bread

  • 170g wholemeal flour 
  • 170g strong white flour
  • 1tsp bicarbonate of soda
  • 3/4 tsp salt
  • 1/2 tsp cracked black pepper
  • 43g softened butter
  • 310ml buttermilk


Put dry ingredients in bowl. Rub in butter.  Mix to dough with buttermilk (if dry you can add a little milk).  Knead lightly and shape into loaf of your choice. Sprinkle with wholemeal flour.
Place on baking tray.  Cook in oven 200c/400f/gas 6 for 45-50 mins, or until loaf is golden brown and sounds hollow when tapped on base.

Potato and Leek Soup

1 large leek

1 stick celery

1/2 brown onion

Olive Oil

4 potatoes

Chicken Stock

Glass of white wine

Salt

Pepper

 

Chop the leek, celery and onion and soften in a large glug of olive oil in a large saucepan. While cooking, peel and chop potatoes in large cubes. Once the onions are soft, add the potatoes, salt and pepper and the glass of wine. Once the alcohol has cooked off add in 500ml of chicken stock and bring to the boil. Simmer for 20 minutes. Once coooked, blend. If the consistency feels to thick please add a little boiled water. To serve place a little drop of creme fraiche in the centre. You can always add some fried bacon / pancetta too......
