Red Snapper and Salsa recipe

Ingredients (for two)

2 x Fillets of Snapper

Rice

2 minute organic rice

5 x sliced mushrooms

1 x grated zuccini

Salsa

1 x mango

8-10 x vine or cherry toms

few drops tobasco

salt & pepper

1/4 red onion finely chopped

small handful Coriander

Method

Preheat the oven to 180 and lay the fish in a roasting dish. Drizzle with a little olive oil and salt and pepper

Chop all salsa ingredients and combine. I like mine chunky but you can chop to the size you like.

Pop the fish in the oven - will take about 15 mins but keep an eye on it

In a pan fry up the mushrooms with some olive oil and salt and pepper, add grated zucchini once the mushrooms are cooked.

Add the bag of rice to warm through

Remove fish from oven and serve all together!
