Ham and Lentil Soup
I call it Grandmas soup but I think Grandad actually did the preparation and she just stirred and took the credit lol. This winter warming soup is healthy, full of flavour and cosy memories.
Ingredients:
  • 1 x Lg Carrot diced
  • 1 x Lg brown onion diced
  • 1 x Lg celery stick diced
  • 1 x Garlic clove crushed
  • 1 x Bay Leaf
  • 3 x sprigs of thyme
  • 500ml chicken stock
  • 1 x Ham shank
  • 2 x cups lentils (soaked overnight)
  • Olive Oil

Method:

  1. Fry off carrot, celery and onion till onion is soft
  2. Add garlic, bay leaf and thyme
  3. Add Ham and stock
  4. Add lentils
  5. Bring to boil
  6. Simmer for 2 hours (keep checking and add some water if consistency looks too thick)
  7. Remove ham. Get rid of the bone and fat, shred meat and place back in soup

Serve as is or with crusty bread and butter!
