Chicken in Orange and Tarragon Sauce

This is such a fresh, tasty, quick and easy recipe. Best served with some green veg and some brown rice or grains.


  • 4 Chicken thighs
  • 1 Red onion
  • 1 Carrot
  • 1 Small bunch Tarragon
  • 1 Large Orange juiced
  • 250ml Chicken stock
  • Salt and Pepper
  • Optional Creme Fraiche


  1. Finely Slice onion, Carrots (thin sticks or Julienne), wash and prepare tarragon

  2. On another board cube the chicken in to 2cm chunks

  3. Juice the orange

  4. I start by cooking off the onion in a good slug of olive oil

  5. Add the chicken and brown with a pinch of salt and pepper

  6. Add the Carrots and orange

  7. Add some of the stock and tarragon

  8. Simmer and add more stock if you feel that it is reducing too much

  9. I steam some broccoli on the side and 2 minutes before being ready I use the microwave organic brown rice for speed!

  10. After 20 minutes you can serve. If you want to add a tablespoon of cream fraiche you can.
