Broccoli and Cauliflower Soup Recipe



Head of broccoli

Head of cauliflower

One brown onion

Vegetable stock (Boullion), or whatever stock you like


Olive Oil

Salt, Pepper




  1. Chop onion and cook in large saucepan with a good glug of olive oil until soft
  2. Chop broccoli and cauliflower in to florets and add to soft onions
  3. Add tablespoon of veg stock or carton of liquid stock
  4. Top with water so that the liquid just covers the veg
  5. Bring to boil and simmer until soft (around 15 mins)
  6. Blitz with stick blender and serve


Serving suggestions


  1. Serve with crusty buttered bread if you are being naughty!
  2. I like to crumble a little blue cheese on top for a BANG of flavor
  3. Serve with a little crème fraiche through the top and sprinkle some crispy breadcrumbs or croutons for crunch
  4. Could also add some crispy pancetta
  5. Or just have as is! So healthy and tasty
